A Muffin Break...

I buy a dozen bananas a week. We eat about ten of them.

I am always left with a few manky bananas by Tuesday, to be used in baking.

I sense that this, in light of the devastation that Queensland banana plantations have suffered, is not a state that we will have the luxury of enjoying over the next long while.

But, in between times, I give you my recipe for some very delicious Banana and Choc Chip Muffins. (I would love to credit someone somewhere with the recipe. I have no idea. I have vague recollection of someone in my Darwin Mummies Group making these? Perhaps?

These muffins are affectionately known by my children as Manky Muffs. Sorry. That is so inappropriate, I know. But it makes me giggle.

Banana and Choc Chip Muffins




 
245g plain flour
100g caster sugar
50g light brown sugar
1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
65g chocolate bits
2 large eggs, lightly beaten
115g butter, melted and cooled
2 manky very ripe large bananas (approximately 45g?) mashed well
1 teaspoon pure vanilla extract

  • Preheat oven to 180`c
  • Grease a 12 cup muffin pan. I use muffin paper cases too - to make the muffins lunchbox proof.
  • In a large bowl combine the flour, sugars, baking powder, baking soda, salt, and chocolate.
  • In a medium-sized bowl combine the mashed bananas, eggs, melted butter, and vanilla.
  • Lightly fold the wet ingredients (banana mixture) into the dry ingredients until just combined and batter is thick and chunky.
  • Spoon the batter into the prepared muffin cases.
  • Bake for about 20 - 25 minutes or until a toothpick inserted in the center comes out clean.
  • Place on a wire rack to cool for five minutes and then remove muffins from pan.
 These freeze well for lunchboxes. But they are better eaten warm from the oven...of course.

  6. hmmm yum! I have some manky bananas to transform into muffins tomorrow (although can't use this recipe because of the egg :( but have an egg free one thankfully :) ) . I was shocked to find that Bananas in my local supermarket had gone up already from $2.98 a kilo on friday to $10.98 a kilo on Sunday! They will be few and far between around here for a while now :( . Lucy, can you recommend any websites or even links to your recipes of low fat/ low sugar recipes/ snacks? My group of Grade 6's are going to be running a mini canteen once a week at school of produce they grow and cook and I would love to make the whole thing healthier for all (to prove that healthy foods can be tasty too :) ).

  15. Yummo!! I can feel a little bit of baking coming on...I'll let you know how these turn out with egg replacer and dairy-free chocolate chips. Yep - we're an egg-and-dairy-free household thanks to my son. And yet I still seem to have way too many yummy things to taste-test?!? Perhaps if I work out how many Weight Watchers Propoints they're worth, I might be able to do some bargaining...!!! Thanks Lucy!

  23. Hey Lucy - on the off chance you get emailed with new comments I'm just wondering how you wrap these to freeze for the lunchbox? Have just popped a batch in the oven and was wondering. Do you just put them nude in a box container an then into the lunch box when necessary or wrap them individually first. Rather than go with trial and error thought I'd ask the manky narnie xpert :O)

    Caz, I wrap them in foil and freeze them. I wrap them in foil for the lunch packs too. I would rather soft that stale textured, IYKWIM?
