Big time.
Last week we played at Sarah's place.
This week it is my turn.
And I proposed the theme too........a healthy recipe please...........the one you dish up when you are feeling like a virtuous goddess.
The smug smuggedy smug smug low fat low carb one, in my case.
The recipe below also has the advantages of being BBQ'd, so lovely husband actually cooks it, not me.
Also, the kids like it. Less nagging.
So here it it. (It is scarily circa 1970's........like so much of my life........)
BBQ'd Prawn and BBQ'd fruit Warm Salad
Get this:
24 uncooked large king prawns, peeled
½ pineapple, cored & cut into circles, or 300g sliced pineapple rings from a tin (in juice not syrup, drained)
1 large mango cut into cheeks
1 large banana, cut into chunks
¼ cup fresh mint, chopped finely
Juice and zest of a lime
Then do this:
- Cook the prawns on a lightly oiled BBQ flat plate
- Caramelise all the fruit on the BBQ as well
- Combine the mint and the lime juice
- Mix everything together in bowl and serve
I don't eat much processed carbs these days, but lovely husband and the children would have some plain steamed rice with it perhaps......or just crusty bread?
Either way, this is only about 350 cals per serve, and very low fat and high in protein. Perfect. My body is a temple and all that.........

I've just switched to low carb and low fat so will definitely put this recipe on "my list." Coles online free delivery means I am no longer tempted by sweet treats but the low carb bit is still a challenge!

ReplyDeleteCarmen, I have made it with white fish, chicken, turkey......anythings works.
ReplyDeleteIf you want to add some spike, sweet chilli sauce mixed witht the lime juice adds some heat too.
