And they are all tasty faves?
But some might not be quite.......errrrm, visually gorgeous?
What I am asking here is, does anyone else have a really ugly dinner?
You know the one: the one everyone loves, that is really easy and really yum? And the one that is also "good for us", in that it is crammed full of protien and veggies?
Chances are you do. Probably a "one pot shovel" as lovely husband likes to call it. ie, you make it in one pot, and then shovel it into a bowl, flop in front of the telly, and shovel it in your mouth, with a fork in one hand and your brain elsewhere?
Or, cringe, is that just us??
Ours is just called "Ugly Dinner"
Our Ugly Dinner is quite delish.
And here it is:
Mince Chow Mein
1 sachet of Maggi Mince Chow Mein
1 onion, chopped
1 bag of dry coleslaw
Handful of frozen peas
400g lean minced beef
1 packet 98% fat free 2 minute noodles, prepared or if you are avoiding processed carbs, use fresh beansprouts instead:
Handful of peanuts or roasted broadbeans
Something green to garnish
Do this:
Dry fry the onion, add the mince
Add the sachet mix
Add the dry coleslaw
Add the peas
Add the cooked noodles or beansprouts
Add the nuts/broadbeans
Sprinkle with a green garnish (we always appear to have spring onion lurking.)
Serve, and shovel in.
What is YOUR ugly dinner? (Please, tell me you do have one?!)

Actually yours looks quite yum!
ReplyDeleteGood old Chow Mein, it's a staple in our house too. As is stew, casserole, & anything you can cook in one pot like you said!
My ugly dish is a pureed spinach mixture with chunks of paneer (like a firm ricotta). Looks like a bowl of vomit, seriously, but is so delish & 2 year old loves it!
Thanks for the recipe. I love ugly food, we call it "gruel" in my house. Ha ha.
ReplyDeleteGreat Post! I would never have thought to use the ready made dry coleslaw!!!! No more cabbage slicing for me, Thanks for that brilliant hint! Chow mein is one of our "one pot shovel", Ugly Meals along with Tuna Mornay and Savoury Mince on toast.
ReplyDeleteI'm with DarNonymous - that does look damned delish and rather pretty (probably the sliced green onions on top). In winter everything goes in the crockpot and comes out looking ugly. So long as it has a range of colours and textures I'm happy. I'm just thrilled that it's autumn and I have an excuse to use the crockpot again!
ReplyDeleteChow Mein is our 'ugly' dish too. A lot of my one pot wonders are! But they taste fantastic.
ReplyDeleteThank goddess for you all. Since blogging more recently, I have become aware of so many divine food blogs that I feared my ugly dinners put us in the minority!
ReplyDeleteHehe. 'Ugly dinners', I like it.
ReplyDeleteThat is not even ugly!! You should see my dinners! lol
ReplyDeleteMy ugliest is tuna balls/rissoles/patties/thingies. I never remember what to call them and change it all the time...tuna thingies is most common.
PS I'm stealing, I mean borrowing this recipe! :) THANKS!!
ReplyDeleteHey Lucy, thanks so much for putting me onto Auction Sniper!!!!
ReplyDeleteI'd never even heard about it (as always I am way behind the 8 ball!).
I won everything I bid on today. I am like the Ebay PIMP now!
Though now that I am winning most, instead of like 1 in every 10, I need to factor that into how much I'm bidding. Went a tad over budget today. Eeeek!
Thanks again. D.
See: the caring and sharing wonderful world of blogland! Sniping & ugly dinners.....we sound so so sinister!
ReplyDeleteI think your chow mein looks pretty good.
ReplyDeletePalek paneer (what Darnonymous described) is one of my favourite foods but it looks so uninspiring! Green-gray slush smattered with light phlemy-looking lumps. Absolutely gorgeous scooped up with fresh naan (bread).
But most of my food is ugly. Tonight was tuna pasta, with the tuna all mashed up so the kids couldn't easily pick it out. I can't do graceful food!
I hate to admit this, but that would be quite gourmet for us. My husband gets home first with the kids and usually fixes them PB&J sandwiches or frozen pizza or something equally bachelor-foodish. On the weekends I try to do better, but we're pretty informal with our dinners.
ReplyDeleteThis Palek paneer.....can someone post the recipe for me?!
ReplyDeletethis looks ugly enough to eat!
ReplyDeletei make a lot of shovel meals - they pack in the nutrition, taste good and freeze well!
Oh I love mince chow mein, it was one of my brother's staples when he first moved out of home, and was one of the first meals he made me. I must do it for the kids.
ReplyDeleteMy ugly dinner is Jumbuck Stew. (Lamb chops, loads of vegies, cooked for hours in the slow cooker.)
It doesn't look pretty but it's delicious and so easy.
