Point & Shoot: Rice Bubble Treaty Things a là Jessica Seinfeld

I have to premise this by telling you that we went to make this paticular treaty thing the other morning only because I knew we had totally run out of ALL types of flour.....there was not even a dusty old packet of weaval infested wholemeal in the pantry. (Can you tell I have a sick kid in a wheelychair so I have no time nor inclination to get to the supermarket?!)


So chocolate crackles sprang to mind, requiring no flour.

Until I remembered that we had no dessicated coconut, nor any Copha.

So, I remembered that the too good to be bloody true Jessica Seinfeld, in her perfect mother cookbook, has a recipe for "Marshmallow Crispy Treats" which uses, get this, brown rice which is puffed, marshmallows and flaxmeal.

As if.

But I DID really want to try the concept of melted marshmallows.


(Fool that I am, I have offered to make a bake/slice/biscuit/treaty thing contribution to the school sports day cake stall fundraiser. This was intended as practice run.)

So, by now I have the Rice Crispies and I am digging in the back of the larder for the marshmallow stash. That is SEVERELY diminshed. Not by me, I hasten to add. No idea who, but not me.

So instead of 10oz that Jessica Seinfeld required, I had a pathetic 1oz.

FARK.

SO, I ended up melting some cooking marg, throwing in the few marshmallows we did have, adding some cocoa powder and also some icing sugar. And the puffed rice.

And it worked like a charm. And here is a point and shoot that LEXIE took! Pretty good, that little threenager of mine!

Ingredients:
 
Cooking Spray


1 tablesppoon trans-fat-free soft tub margerine spread (?? I would just use marg or butter?)

10oz (250g) marshamallows

6 cups crisp brown rice cereal

¼ cup flaxseed meal


Method:


Coat an 8x8 " baking tin with the cooking spray

Melt the margerine in a large pot over a low heat, add the marshmallows and stir completely melted. Remove pan from heat.

Add the rice cereal and flaxseed and stir until the rice cereal is well coated. Press the mixture into the baking dish and let cool before cutting into squares.

You know my mother-in-law bought me the Seinfeld book (what are you trying to say, huh?) and I made and froze little baggies of pureed squash and what-have-you (which by the way, taste like sh*t in a grilled cheese sandwich, fyi) and most of them are still there, years later, in my freezer. It was a good idea... just never actually used them.

  6. Hahahaha.........Charlie and Lexie had these for morning tea. Upon clearing up their debris, I freaked, thinking the puffed rice droppings were exactly that......separate and fallen and brown, they look like mouse turds!

    Sounds like your pantry is in the same state as mine. And there is no way I would have been able to come up with something that looks this decent and edible!
